Mango Chutney

Ingredients
2 tablespoons vegetable oil
2 inch piece of ginger, peel, minced
2 garlic cloves, minced
1 jalapeno, minced
1 tablespoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
½ teaspoon ground cardamom
½ teaspoon ground cinnamon
½ teaspoon salt
2 mangoes, no too soft, peeled, pitted, diced
2 granny smith apples, peeled, cored, diced
1 cup white granulated sugar
¼ cup cider vinegar
½ cup water

Directions:
In a small saucepan over medium heat, add the oil. Cook the ginger, garlic and chilies stirring for 1 minute. add the spices, cook for 2 minutes. add the mangoes and apples, sugar, salt, vinegar and water. Bring to a boil, reduce to a very low simmer. Cover and cook for 45 minutes to an hour or until everything is very soft. Allow to cool, mash the mixture to desired consistency. print recipe
